Valentine Chocolates and Chocolate Sniffing

We've had lots of orders for Valentine's chocolates this week, so we've been back and forth to the Post Office several times a day, which is no bad thing, as we're doing some R&D on new flavours at the moment,
so there's plenty of chocolate tasting to be done; hence the extra exercise is very welcome! We've also been working on our Ely Gin truffles, trying to get more of a kick of gin into the flavour so that they don't just taste like a fruity ganache. We've got a range of six flavours that we're focussing on and are hoping to have these ready in the next few weeks. I read an interesting article in this week's Telegraph about Belgian chocolatier Dominique Persoone's chocolate-sniffing device, which he created for a Rolling Stones party in 2007. It's designed to give you a chocolate hit and he mixes the cocoa powder with mint and either ginger or raspberry. It took some perfecting to create the snorting powder as chocolate itself was too dry. Before the successful formula was discovered, Dominique used a mix that included chilli pepper. "It's a very bad idea," he said. Yes, I can imagine it was. divider
