The Best Laid Plans

I usually spend some time on Sunday evenings making a ‘to do’ list for the next week and planning our production schedule. The plans are generally fluid as we often need to move things around in order to accommodate unexpected orders or to incorporate meetings, but it’s a good guideline for where we need to be by the end of the week.

This week’s plans came to a grinding halt on Monday when my dad was rushed into hospital. He’s not been well since October, when he developed a kidney infection and spent several weeks in hospital and then in residential care whilst they put a home care plan in place before he was allowed back home. He seemed to be recovering nicely; although he wasn’t as mobile as before he went into hospital, he was still managing reasonably well. Last weekend he was a little off colour but it didn’t seem overly serious so we asked for a doctor’s visit on Monday just to check how he was doing. Unfortunately the kidney infection was back, so he’s now back on a re-hydration drip and antibiotics. This meant that I had to halt production in order to go and visit him.

On Monday I’d started around 40 trays of chocolates, which I couldn’t leave without finishing off or the fillings would start to crystallise. So that meant an early start on Tuesday to finish off the trays before driving the 200 miles to Yorkshire to spend a few hours with Dad. Needless to say, the remainder of the week’s production has been halted – luckily we’d already got all our show stock finished last week. This week, if you ask me what the most important trait you need to run your own business is, I’d say flexibility.

Hilary Delamare

Choctails® was founded by husband and wife team Simon and Hilary Delamare. Simon's suggestion of putting cocktail flavours into chocolate took Hilary's chocolate-making hobby to new heights, until in May 2012, the decision was made to turn the hobby into a full time business. The domestic kitchen became a production factory by day, and the dining room was given up to become a place where hand-made chocolate is crafted
