Choctails® was founded by husband and wife team Simon and Hilary Delamare. A weekend chocolate-making hobby for personal consumption took an unexpected turn in June 2010 when Simon casually asked “Could you put a cocktail flavour into chocolate?” Thus began weekends of cocktail-mixing and chocolate tasting.
In May 2012 the decision was made to turn the hobby into a full time business. The domestic kitchen became a production factory by day and the dining room was given up to become a chocolate store.
Each of our Choctails has been carefully blended to try and recreate the essence of the cocktail. People’s first instinct is that these are liqueur chocolates and that’s absolutely not the case.
We start with the cocktail in its purest form and then taste it with different types of chocolate to see which works best. We then mix a ganache using the pure cocktail and the selected chocolate and compare the flavours. Adding chocolate alters the character of the cocktail, so it’s then a labour of love to rebalance the flavours to bring it back to the original flavour profile. Chocolates such as the Pina Colada were relatively easy to create; being a cream-based cocktail it could only ever be a white chocolate. The Long Island Iced Tea, however, has such an extensive ingredients list that it’s a much more difficult flavour to recreate.
Don’t think in terms of white, milk or dark chocolate, but instead, think about the cocktail. The chocolate is an integral part of the blend. Be daring. Try something you wouldn’t normally choose. You might surprise yourself.
At Choctails we want to ensure that our chocolate not only looks and tastes great, but that sourcing and processing of our ingredients has been done according to green, fair and ethical standards. That’s why all of our chocolates are made from sustainably grown cocoa and are where possible we source spirits from local producers with a similar ethic to our own.
