During the Good Food Show weekend I bumped into Bev from the Chocolate Academy and mentioned my chocolate bar problem. I’d got a few with me to use as samples, and she agreed with my diagnosis that it was the chocolate cooling down too slowly. So next week we’re running a test with a new refrigeration system. Fingers crossed we’ve identified the issue and solved the problem.
