I abandoned the running completely this week. Mainly because the beast from the east meant we’ve been knee deep in snow and the pavement’s disappeared, along with most of the road. We sat back and watched the drama unfold as people piled into the snow drifts thinking they weren’t going to get stuck …. and promptly did ….
So whilst the weather outside was frightful I decided to spend the week revisiting my caramel collection and boiled up several pans of bubbly, gooey, and slightly alcoholic caramels. I’m still getting some crystalisation in the rum caramel after it’s cooled, so that needs a little more work, but the Mango & Basil caramel is much better balanced this year, as is the Pear & Ginger. My biggest problem now is how to stop testing the stuff ….
