We made it! Monday was spent finishing the boxing up. As the chocolates come out of the moulds they are stored in trays which hold 6 rows of 7 chocolates and then the boxing up is done 42 trays at a time to make sure all the boxes contain their full complement of chocolates. After the visual check we then weigh and film wrap each box. The weight of every box is logged and then packed in the cartons, which have to be weighed and stamped with the best before date, the pack weight and the product information. Only then is it ready to go.

The boxes were collected on Tuesday, so I spent Wednesday having a short breather and reorganising everything ready to begin production for drop 2 on Thursday. This one’s a little smaller (13, 560 truffles and 1350 chocolate bars).
