Over the last few months we’ve been working on a Rum collection. I couldn’t decide whether to do a collection of different rums, or a collection of rum cocktails, so I did both. This month’s chocolate club has been enjoying the Rum collection, with the cocktail collection to follow next month.
Working with different rums has highlighted just how much variety there is on the market these days from all over the world. In the rum collection I’ve paired rums from around the world with chocolate from the same country. For the rum cocktails I delved deep into my trusty Difford’s Guide for inspiration and unearthed some wonderful recipes. My favourite Dark N Stormy was a relatively straightforward chocolate to develop, but the more complex Pirate Daiquiri was a much more difficult proposition to get right.
The product development has also left us with a shelf of diverse rums to enjoy throughout the winter months. Cheers!
